Vanilla and Cotton Candy cupcakes

CUPCAKES

  • 1 ¼ cup (300 ml) flour
  • 1 ¼ tsp. (6.25 ml) baking powder
  • 1/2 tsp. (2.5 ml) salt
  • ½ cup (125 ml) salted butter
  • ¾ cup (60 ml) sugar
  • 2 ambient temperature big eggs
  • 2 tbsp. (10 ml) vanilla extract
  • ½ cup (125 ml) buttermilk (or you can mix ½ cup milk with 1 ½ c. tsp. of lemon juice)

FROSTING

  • 1 cup (250 ml) softened unsalted butter
  • 2 cups (500 ml) ambient temperature cream cheese
  • 1 cup (250 ml) icing sugar
  • 1 ⅔ cup (415 ml) melted Chocolats Favoris Dreamy White Chocolate Drops
  • 1 can (215 g) Chocolats Favoris Cotton Candy Fondue

Cupcake's Instructions

  1. Preheat the oven to 350 °F and put cupcake liners in the muffin pan.
  2. Combine flour, baking powder, and salt in a medium bowl. Set aside.
  3. In another bowl, by hand or with a hand mixer, beat the butter and the sugar for 5 minutes until you get a creamy mixture.
  4. Add the eggs, making sure that each egg is beaten into the mixture. Add the vanilla extract and mix it again.
  5. Run your mixer at the minimum speed and combine the flour mixture and the buttermilk.
  6. Add the mixture to the cupcake liners.
  7. Bake for 20-23 minutes at 350 °F, or until a toothpick comes out all clean.
  8. Let cool at room temperature and enjoy!

Frosting’s Instructions

  1. By hand or with a hand mixer, mix the butter, cream cheese, and icing sugar until you get a smooth mixture with no lumps.
  2. Add melted white chocolate and blend it. If the icing is too soft, put it in the refrigerator for a few minutes, mix from time to time, or you can add a little bit of icing sugar.
  3. Spread your icing onto the cupcakes. Let them cool in the refrigerator for 15 minutes.
  4. During this time, melt the fondue. When it is ready, put the chocolate in a large bowl, but not too deep.
  5. Slowly turn the vanilla frosting into the fondue with your spoon or your piping bag and put the mix in the refrigerator.
  6. Put some commercial cotton candy on top if you want a little fantasy.
